- 1 cup fresh strawberries, hulled and sliced
- 1/4 cup fresh lemon juice (about 2 lemons)
- 2 tablespoons simple syrup (adjust to taste)
- 1 cup sparkling wine or champagne, chilled
- 1/2 cup club soda or sparkling water, chilled
- Ice cubes
- Fresh mint leaves and lemon slices for garnish (optional)
Instructions
- In a blender, purée the strawberries until smooth.
- Strain the purée through a fine mesh sieve into a pitcher to remove seeds (optional).
- Add lemon juice and simple syrup to the strawberry purée and stir well.
- Fill glasses with ice cubes and pour the strawberry-lemon mixture about halfway up each glass.
- Top with sparkling wine and a splash of club soda.
- Gently stir and garnish with mint leaves and lemon slices if desired.
- Serve immediately while bubbly.
Notes
- Use prosecco for a sweeter version or brut champagne for a drier flavor.
- Make it non-alcoholic by substituting sparkling wine with more club soda or lemon-lime soda.
- Prepare the strawberry-lemon base in advance and add bubbly just before serving.
