Instructions
- In a large mixing bowl, combine crushed vanilla wafers, shredded coconut, 1 cup powdered sugar, and cocoa powder.
- Add rum, corn syrup (or honey), and vanilla extract. Mix until the dough comes together and holds when pressed.
- Roll the mixture into 1-inch balls and place on a parchment-lined baking sheet.
- Roll each ball in additional powdered sugar to coat thoroughly.
- Refrigerate for at least 1 hour to allow flavors to meld and balls to firm up.
- Store in an airtight container in the refrigerator until ready to serve.
Notes
- For a stronger flavor, let rum balls sit for 24 hours before serving.
