- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/4 tsp salt
- 1/4 cup granulated sugar (for topping)
- 1 tsp ground cinnamon (for topping)
Instructions
- Preheat oven to 325°F (163°C) and line an 8×8-inch baking dish with parchment paper.
- In a large bowl, cream together the softened butter and powdered sugar until smooth and fluffy.
- Add vanilla extract and mix to combine.
- Gradually add in the flour and salt, mixing until a soft dough forms.
- Press the dough evenly into the prepared baking dish.
- In a small bowl, mix the granulated sugar and cinnamon together.
- Sprinkle the cinnamon sugar evenly over the pressed dough.
- Using a knife or bench scraper, score the dough into small bite-sized squares (about 1 inch).
- Bake for 30–35 minutes, or until the edges are lightly golden.
- Remove from oven and re-cut along the score lines while warm.
- Allow to cool completely in the pan before serving or packaging.
Notes
- Make sure to press the dough firmly and evenly into the pan for uniform baking.
- Store in an airtight container at room temperature for up to 1 week.
- These cookies freeze well—store in a freezer-safe bag for up to 3 months.
