Description

Chocolate Cherry Cordial Truffles are rich, indulgent treats featuring a sweet maraschino cherry center wrapped in creamy chocolate ganache and coated in a silky chocolate shell. Perfect for holidays, gifts, or special occasions.


Ingredients

  • 24 maraschino cherries, drained and patted dry
  • 8 oz semi-sweet chocolate, chopped
  • 1/2 cup heavy cream
  • 1 tbsp butter
  • 1/2 tsp almond extract (optional)
  • 8 oz dark or milk chocolate (for coating)
  • Optional: white chocolate for drizzling or decorative sprinkles

Instructions

  1. Place chopped semi-sweet chocolate in a heatproof bowl. Heat heavy cream and butter in a saucepan over medium heat until it just begins to simmer.
  2. Pour hot cream mixture over the chocolate. Let sit for 2 minutes, then stir until smooth. Add almond extract if using.
  3. Let ganache cool, then refrigerate for 1–2 hours until firm enough to scoop.
  4. Using a spoon or small scoop, take a portion of ganache and flatten slightly. Place a maraschino cherry in the center and wrap the ganache around it, rolling into a ball. Repeat with remaining cherries.
  5. Place truffles on a parchment-lined tray and refrigerate for 30 minutes to firm up.
  6. Melt dark or milk chocolate for coating. Dip each truffle into the melted chocolate, allowing excess to drip off. Place back on tray.
  7. Drizzle with melted white chocolate or top with sprinkles if desired.
  8. Refrigerate until set. Store in an airtight container in the fridge.

  • Dry cherries thoroughly to prevent ganache from slipping during shaping.
  • Use quality chocolate for the best flavor and texture.
  • Truffles can be made ahead and kept refrigerated for up to 2 weeks.
