Description

Zesty Mexican Tuna Salad is a light, refreshing, and protein-packed dish that combines tuna with black beans, corn, fresh veggies, and a tangy lime-chili dressing. It’s perfect for quick lunches, meal prep, or a healthy, no-cook dinner.


Ingredients

  • 2 (5 oz) cans tuna, drained
  • 1 cup canned black beans, rinsed and drained
  • 1 cup corn kernels (fresh, canned, or thawed frozen)
  • 1/2 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, minced (optional)
  • 1 avocado, diced
  • 1/4 cup chopped fresh cilantro
  • Juice of 2 limes
  • 2 tbsp olive oil
  • 1/2 tsp chili powder
  • 1/4 tsp ground cumin
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine tuna, black beans, corn, bell pepper, red onion, jalapeño, avocado, and cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, chili powder, cumin, salt, and pepper.
  3. Pour dressing over the tuna mixture and toss gently to combine.
  4. Serve chilled or at room temperature, on its own, with chips, or in lettuce wraps.

Notes

  • Use lime zest for extra citrus punch.
  • Add hot sauce or chipotle for smoky heat.
  • Best served fresh but can be refrigerated for up to 2 days.
