- 1 cup canned black beans, rinsed and drained
- 1 cup corn kernels (fresh, canned, or thawed frozen)
- 1/2 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, minced (optional)
- 1 avocado, diced
- 1/4 cup chopped fresh cilantro
- Juice of 2 limes
- 2 tbsp olive oil
- 1/2 tsp chili powder
- 1/4 tsp ground cumin
- Salt and pepper, to taste
Instructions
- In a large bowl, combine tuna, black beans, corn, bell pepper, red onion, jalapeño, avocado, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, chili powder, cumin, salt, and pepper.
- Pour dressing over the tuna mixture and toss gently to combine.
- Serve chilled or at room temperature, on its own, with chips, or in lettuce wraps.
Notes
- Use lime zest for extra citrus punch.
- Add hot sauce or chipotle for smoky heat.
- Best served fresh but can be refrigerated for up to 2 days.
