- 1 cup white chocolate chips or chopped white chocolate
- 1/2 cup sweetened condensed milk
- 1 1/2 cups shredded coconut, divided
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Whole almonds or hazelnuts (optional, for center)
Instructions
- In a microwave-safe bowl, melt the white chocolate in 20-second intervals, stirring after each, until smooth.
- Stir in the sweetened condensed milk, vanilla extract, and a pinch of salt until fully combined.
- Add 1 cup of shredded coconut to the mixture and stir until a thick dough forms. Chill for 30 minutes to firm up.
- Once firm, roll the mixture into small balls (about 1 inch in diameter). If desired, press a whole almond or hazelnut into the center of each truffle and roll again to seal.
- Roll each truffle in the remaining 1/2 cup of shredded coconut to coat evenly.
- Place on a parchment-lined tray and refrigerate for at least 1 hour before serving.
- Store in an airtight container in the refrigerator for up to one week.
Notes
- For a richer flavor, toast the shredded coconut before rolling.
- You can use coconut extract instead of vanilla for a stronger coconut taste.
- These truffles also freeze well for up to 2 months.
