- 3 medium apples, peeled and thinly sliced
- 2 tbsp butter
- 2 tbsp brown sugar
- 1 tsp ground cinnamon
- 1/4 tsp nutmeg (optional)
- 1 tsp lemon juice
- Powdered sugar, for garnish (optional)
- Maple syrup or whipped cream, for serving (optional)
Instructions
- In a mixing bowl, whisk together flour, eggs, milk, melted butter, sugar, vanilla, and salt until smooth. Let the batter rest for 15–30 minutes.
- Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
- Pour about 1/4 cup of batter into the pan, swirling to coat the bottom evenly.
- Cook for 1–2 minutes until edges lift slightly, then flip and cook another 30 seconds. Repeat with remaining batter.
- For the filling, melt butter in a skillet over medium heat. Add apples, brown sugar, cinnamon, nutmeg, and lemon juice.
- Cook for 8–10 minutes, stirring occasionally, until apples are tender and caramelized.
- Spoon apple mixture onto each crêpe and roll up gently.
- Serve warm, dusted with powdered sugar and drizzled with maple syrup or topped with whipped cream if desired.
Notes
- Crêpes can be made ahead and stored in the fridge with parchment between each layer.
- Use a variety of apples for more depth of flavor—try Granny Smith and Honeycrisp.
- Add chopped nuts or raisins to the filling for texture.
- Excellent served with vanilla ice cream for a dessert version.
