Instructions

  1. In a mixing bowl, whisk together flour, eggs, milk, melted butter, sugar, vanilla, and salt until smooth. Let the batter rest for 15–30 minutes.
  2. Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
  3. Pour about 1/4 cup of batter into the pan, swirling to coat the bottom evenly.
  4. Cook for 1–2 minutes until edges lift slightly, then flip and cook another 30 seconds. Repeat with remaining batter.
  5. For the filling, melt butter in a skillet over medium heat. Add apples, brown sugar, cinnamon, nutmeg, and lemon juice.
  6. Cook for 8–10 minutes, stirring occasionally, until apples are tender and caramelized.
  7. Spoon apple mixture onto each crêpe and roll up gently.
  8. Serve warm, dusted with powdered sugar and drizzled with maple syrup or topped with whipped cream if desired.
