- 4 slices of bread (sourdough, white, or your favorite)
- 4 tablespoons unsalted butter, softened
- 1 cup shredded sharp cheddar cheese
- 1/2 cup shredded mozzarella cheese
- Optional: 1 tablespoon mayonnaise
Instructions
- Preheat a skillet or griddle over medium heat.
- Spread butter evenly on one side of each bread slice. Optionally, spread a thin layer of mayonnaise on the inside of each slice for extra richness.
- In a small bowl, mix the shredded cheddar and mozzarella.
- Place two slices of bread, buttered side down, onto the skillet. Top each with half the cheese mixture, then place the other bread slices on top, buttered side up.
- Grill for 3–4 minutes on each side, pressing gently with a spatula, until the bread is golden and the cheese is melted and gooey.
- Remove from skillet, let rest for 1 minute, then slice and serve warm.

- Try different cheese combinations like gouda, gruyère, or pepper jack.
