- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup ube halaya (purple yam jam)
- 1/2 cup whole milk
- 1 tsp vanilla extract
- 1/2 tsp ube extract
- For the frosting:
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 2–3 tbsp heavy cream or milk
- 1/2 tsp ube extract
- Purple food coloring (optional for deeper color)
Instructions
- Preheat oven to 350°F (175°C) and line a 12-cup muffin pan with cupcake liners.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in eggs one at a time, then add ube halaya, vanilla extract, and ube extract. Mix until combined.
- Add dry ingredients in three parts, alternating with milk, beginning and ending with dry ingredients. Mix until just combined.
- Divide batter evenly among cupcake liners and bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.
- Cool cupcakes in pan for 5 minutes, then transfer to a wire rack to cool completely.
- For the frosting, beat butter until creamy. Gradually add powdered sugar, ube extract, and milk until desired consistency is reached.
- Add purple food coloring if a deeper hue is desired. Beat until fluffy.
- Pipe or spread frosting onto cooled cupcakes and serve.
Notes
- Ube halaya and ube extract can be found at Asian or Filipino grocery stores.
- Let cupcakes cool completely before frosting to prevent melting.
- Top with edible glitter or sprinkles for added flair.
