  • 2 large eggs
  • 1/2 cup ube halaya (purple yam jam)
  • 1/2 cup whole milk
  • 1 tsp vanilla extract
  • 1/2 tsp ube extract
  • For the frosting:
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 23 tbsp heavy cream or milk
  • 1/2 tsp ube extract
  • Purple food coloring (optional for deeper color)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin pan with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then add ube halaya, vanilla extract, and ube extract. Mix until combined.
  5. Add dry ingredients in three parts, alternating with milk, beginning and ending with dry ingredients. Mix until just combined.
  6. Divide batter evenly among cupcake liners and bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool cupcakes in pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. For the frosting, beat butter until creamy. Gradually add powdered sugar, ube extract, and milk until desired consistency is reached.
  9. Add purple food coloring if a deeper hue is desired. Beat until fluffy.
  10. Pipe or spread frosting onto cooled cupcakes and serve.

Notes

  • Ube halaya and ube extract can be found at Asian or Filipino grocery stores.
  • Let cupcakes cool completely before frosting to prevent melting.
