- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together Greek yogurt, olive oil, lemon juice, garlic, salt, and pepper to make the tzatziki dressing.
- In a large bowl, combine chickpeas, cucumber, cherry tomatoes, red onion, and dill.
- Pour the tzatziki dressing over the chickpea mixture and toss until well coated.
- Refrigerate for at least 15 minutes to allow flavors to meld.
- Serve chilled as a main or side dish.
Notes
