Description

Tzatziki Chickpea Salad is a refreshing and protein-packed salad combining creamy tzatziki sauce with chickpeas, crisp vegetables, and fresh herbs. It’s a perfect light lunch or side dish with Mediterranean flavors.


Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh dill, chopped
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together Greek yogurt, olive oil, lemon juice, garlic, salt, and pepper to make the tzatziki dressing.
  2. In a large bowl, combine chickpeas, cucumber, cherry tomatoes, red onion, and dill.
  3. Pour the tzatziki dressing over the chickpea mixture and toss until well coated.
  4. Refrigerate for at least 15 minutes to allow flavors to meld.
  5. Serve chilled as a main or side dish.

Notes

  • Use vegan yogurt to make the dish completely plant-based.
