- 2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed

- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- Fresh basil or parsley, chopped (for garnish)
- Optional: crusty bread for serving
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and cook until soft and translucent, about 5 minutes.
- Stir in minced garlic and cook for another 1–2 minutes until fragrant.
- Add diced tomatoes, white beans, Italian seasoning, red pepper flakes (if using), salt, and pepper. Stir to combine.
- Simmer uncovered for 10–15 minutes, allowing the flavors to blend and sauce to thicken slightly.
- Sprinkle mozzarella cheese evenly over the top.
- Cover the skillet and cook for 2–3 minutes, or until the cheese is melted and bubbly.
- Remove from heat and garnish with chopped basil or parsley.
- Serve hot, with crusty bread if desired.
