- 1 (32-ounce) bag frozen tater tots
- 1 pound breakfast sausage or bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 8 large eggs
- 1 cup milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: chopped green onions or bell peppers
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Arrange the frozen tater tots in an even layer in the bottom of the dish.
- Sprinkle cooked sausage or bacon evenly over the tots. Add optional veggies if using.
- In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper.
- Pour the egg mixture over the tater tots and meat.
- Top evenly with shredded cheddar and mozzarella cheese.
- Bake uncovered for 45–50 minutes or until the eggs are set and the top is golden brown.
- Let cool for 5–10 minutes before slicing and serving.
Notes
- Can be assembled the night before and baked in the morning.
- Use turkey sausage or plant-based meat for a lighter or vegetarian version.
- Leftovers store well in the fridge for up to 3 days and reheat easily.
