Description

Tomato Chicken is a savory one-pan dish featuring tender chicken simmered in a creamy, spiced tomato sauce. It’s a hearty, family-friendly meal ideal for weeknight dinners or meal prep.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into chunks
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes or 4 fresh tomatoes, chopped
  • 2 tbsp tomato paste
  • 1/2 cup heavy cream or full-fat coconut milk
  • 2 tbsp olive oil or butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 2 tbsp chopped fresh cilantro or parsley (for garnish)

Instructions

  1. Heat olive oil or butter in a large skillet over medium heat.
  2. Add chopped onion and sauté until softened, about 5 minutes.
  3. Stir in garlic and cook for another minute until fragrant.
  4. Add chicken pieces and cook until browned on both sides, about 6–8 minutes.
  5. Stir in tomato paste and diced tomatoes. Mix well.
  6. Add cumin, paprika, salt, and black pepper. Stir to coat the chicken evenly.
  7. Reduce heat to low, cover, and simmer for 15–20 minutes, or until chicken is cooked through.
  8. Stir in cream or coconut milk and simmer for another 5 minutes until heated through and creamy.
  9. Garnish with chopped cilantro or parsley and serve hot.

Notes

  • For extra heat, add chili powder or fresh chilies.
  • Use coconut milk for a dairy-free version with a hint of sweetness.
  • Add spinach or zucchini in the last few minutes of cooking for more veggies.
  • Serve with rice, mashed potatoes, or naan to soak up the sauce.
