- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes or 4 fresh tomatoes, chopped
- 2 tbsp tomato paste
- 1/2 cup heavy cream or full-fat coconut milk
- 2 tbsp olive oil or butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp ground cumin
- 1 tsp paprika
- 2 tbsp chopped fresh cilantro or parsley (for garnish)
Instructions
- Heat olive oil or butter in a large skillet over medium heat.
- Add chopped onion and sauté until softened, about 5 minutes.
- Stir in garlic and cook for another minute until fragrant.
- Add chicken pieces and cook until browned on both sides, about 6–8 minutes.
- Stir in tomato paste and diced tomatoes. Mix well.
- Add cumin, paprika, salt, and black pepper. Stir to coat the chicken evenly.
- Reduce heat to low, cover, and simmer for 15–20 minutes, or until chicken is cooked through.
- Stir in cream or coconut milk and simmer for another 5 minutes until heated through and creamy.
- Garnish with chopped cilantro or parsley and serve hot.

- For extra heat, add chili powder or fresh chilies.
- Use coconut milk for a dairy-free version with a hint of sweetness.
- Add spinach or zucchini in the last few minutes of cooking for more veggies.
