Description

  • 2 cups vegetable or chicken broth (warm)
  • 1 small sweet potato, cooked and mashed
  • 1 tablespoon butter or olive oil
  • 1/2 small onion, finely chopped
  • 1 garlic clove, minced
  • 1/2 cup milk or cream
  • 1/4 cup grated parmesan or mild cheese
  • 1/2 teaspoon salt (adjust for kids)
  • 1/4 teaspoon black pepper (optional)
  • 1 tablespoon fresh parsley (for garnish)

Instructions

  • Prepare the Sweet Potato: Cook the sweet potato until soft, mash it, and set aside.
  • Sauté Aromatics: In a pan, heat butter or oil over medium heat. Sauté the onion and garlic until soft.
  • Toast the Rice: Add Arborio rice and stir for 1-2 minutes until slightly translucent.
  • Add Broth Gradually: Pour in ½ cup warm broth, stirring constantly until absorbed. Repeat until the rice is creamy and tender (about 15-20 minutes).
  • Incorporate Sweet Potato: Stir in the mashed sweet potato, milk or cream, and cheese. Mix well until smooth.
