- 1 small sweet potato, cooked and mashed
- 1 tablespoon butter or olive oil
- 1/2 small onion, finely chopped
- 1 garlic clove, minced
- 1/2 cup milk or cream
- 1/4 cup grated parmesan or mild cheese
- 1/2 teaspoon salt (adjust for kids)
- 1/4 teaspoon black pepper (optional)
- 1 tablespoon fresh parsley (for garnish)
Instructions
- Prepare the Sweet Potato: Cook the sweet potato until soft, mash it, and set aside.
- Sauté Aromatics: In a pan, heat butter or oil over medium heat. Sauté the onion and garlic until soft.
- Toast the Rice: Add Arborio rice and stir for 1-2 minutes until slightly translucent.
- Add Broth Gradually: Pour in ½ cup warm broth, stirring constantly until absorbed. Repeat until the rice is creamy and tender (about 15-20 minutes).
- Incorporate Sweet Potato: Stir in the mashed sweet potato, milk or cream, and cheese. Mix well until smooth.
- Season & Serve: Add salt, pepper (if using), and garnish with parsley. Serve warm.
