Description

Ingredients

  • 1 1/2 cups heavy cream
  • 2 cloves garlic, minced

  • 1 cup grated Gruyère or Parmesan cheese
  • Salt and pepper to taste
  • 1 tablespoon butter (for greasing the dish)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly butter a white ceramic baking dish.
  2. In a saucepan, heat the cream with minced garlic and herbs over low heat until warmed. Do not boil.
  3. Layer the sweet potato slices in the baking dish, slightly overlapping. Season each layer with salt, pepper, and a sprinkle of cheese.
  4. Pour the warm cream mixture evenly over the layered sweet potatoes.
  5. Top with the remaining cheese and a few herb sprigs.
  6. Cover with foil and bake for 35–40 minutes.

  8. Let the gratin rest for 10 minutes before serving.
