Description

  • 4 boneless, skinless chicken breasts
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • 2 cups fresh spinach, chopped
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional)
  • 1 tbsp lemon juice
  • Toothpicks for securing rolls

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Place each chicken breast between parchment and pound to 1/4-inch thickness.
  3. Season both sides of the chicken with salt, pepper, and garlic powder.
  4. In a skillet, heat olive oil over medium heat and sauté spinach until wilted. Let cool slightly.
  5. In a bowl, combine cooked spinach with ricotta, mozzarella, Parmesan, Italian seasoning, red pepper flakes, and lemon juice.
  6. Spread a layer of the cheese-spinach mixture onto each flattened chicken breast.
  7. Roll the chicken tightly from the shortest side and secure with toothpicks.
  8. Place rolls seam-side down in the baking dish and bake for 25–30 minutes, or until the chicken is cooked through (internal temperature 165°F/74°C).
  9. Let rest for 5 minutes before slicing and serving.

  • Use frozen spinach if preferred—thaw and squeeze out excess moisture before mixing.
  • Add sun-dried tomatoes or herbs for extra flavor.
  • For a golden top, broil the chicken for the last 2 minutes of cooking.
