- 4 salmon fillets (skin-on or skinless)
- 2 cups fresh spinach, chopped
- 1/2 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
Instructions
- In a pan, melt butter over medium heat. Add garlic and spinach, cooking until wilted.
- Remove from heat and mix in cream cheese, mozzarella, Parmesan, salt, and pepper.
- Slice a pocket in each salmon fillet without cutting all the way through.
- Stuff the salmon with the spinach-cheese mixture.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear the salmon for 2 minutes per side.
- Transfer to the oven and bake for 10-12 minutes until fully cooked.
- Drizzle with lemon juice and serve hot.
Notes
- Swap mozzarella for feta for a tangier taste.
- Use frozen spinach (thawed and drained) if fresh isn’t available.
- Serve with roasted vegetables, rice, or mashed potatoes.
