Stuffed Oreo Cheesecake Cookies are thick, gooey, and absolutely addictive—stuffed with creamy cheesecake filling and topped with Oreo crumbs!
Ingredients

1 cup unsalted butter, softened

1 cup sugar

1 egg + 1 egg yolk

2 tsp vanilla extract

2 1/2 cups flour

1/2 tsp baking powder

1 cup crushed Oreos
Instructions

Mix cream cheese and powdered sugar; freeze small scoops for filling.

Make cookie dough: Cream butter and sugar, add eggs and vanilla, then dry ingredients and crushed Oreos.

Flatten dough balls, place a frozen cheesecake center and Oreo inside, then wrap and seal.

Bake at 350°F (175°C) for 12–14 minutes.

Cool slightly and enjoy warm.

Refrigerate dough for 30 minutes for thicker cookies.
