- 1 large focaccia loaf (store-bought or homemade)
- 2 cups cooked chicken breast, shredded or sliced
- 1/2 cup mayonnaise or aioli
- 1 tablespoon Dijon mustard
- 1 cup arugula or baby spinach
- 1 tomato, sliced
- 1/2 red onion, thinly sliced
- 4 slices provolone or mozzarella cheese
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Cut the focaccia loaf in half horizontally to create a top and bottom piece.
- In a small bowl, mix mayonnaise and Dijon mustard. Spread evenly on the inside of both bread halves.
- Layer the bottom half with chicken, cheese slices, arugula, tomato, and red onion.
- Season with salt and pepper, and drizzle a little olive oil if desired.
- Place the top half of the focaccia on the sandwich and press down gently.
- Cut into portions and serve immediately, or wrap and refrigerate for up to 1 day.
