Description

Stuffed Chicken Breast with Broccoli and Cheese is a hearty, oven-baked dish featuring juicy chicken breasts filled with a creamy broccoli and cheese mixture. It’s a nutritious, low-carb meal that’s perfect for family dinners or meal prep.

Ingredients

Units Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup broccoli florets, finely chopped (fresh or steamed)
  • 1 cup shredded cheddar cheese
  • 2 oz cream cheese (optional, for creamier filling)
  • 1/2 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil or melted butter
  • Toothpicks or kitchen twine, for securing

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a bowl, mix chopped broccoli, shredded cheddar cheese, cream cheese (if using), garlic powder, salt, and pepper until well combined.
  3. Cut a deep pocket into the side of each chicken breast using a sharp knife, being careful not to cut all the way through.
  4. Stuff each pocket with the broccoli and cheese mixture and secure the opening with toothpicks or kitchen twine.
  5. Optional: Sear the stuffed chicken breasts in a hot skillet with olive oil for 2–3 minutes per side for added color and flavor.
  6. Transfer the chicken to the prepared baking dish and bake for 25–30 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Let rest for a few minutes before removing toothpicks/twine. Slice and serve hot.

Notes

  • Use pre-steamed broccoli for quicker prep.
  • Add red pepper flakes for a spicy kick.
  • For extra richness, top with additional shredded cheese before baking.
  • Wrap in bacon before baking for added flavor and crispness.
