For the Peppers:
- 4 large bell peppers (red, yellow, or green)
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 lb ground beef or ground turkey
- 1 cup cooked rice (white or brown)
- 1 cup marinara sauce
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh parsley or basil for garnish
Instructions
- Prepare the Peppers:
- Preheat oven to 375°F (190°C).
- Cut bell peppers in half lengthwise and remove seeds.
- Place them in a greased baking dish, cut side up.
- Make the Filling:
- Heat olive oil in a skillet over medium heat.
- Sauté onion and garlic until soft.
- Add ground beef and cook until browned.
- Stir in cooked rice, marinara sauce, Italian seasoning, salt, pepper, and paprika.
- Simmer for 5 minutes, then remove from heat.
- Stuff the Peppers:
- Spoon the beef mixture into each bell pepper half.
- Top with shredded mozzarella and Parmesan cheese.
- Bake:
- Cover with foil and bake for 25 minutes.
- Remove foil and bake for another 10 minutes until cheese is bubbly.
- Garnish & Serve:
- Sprinkle with fresh parsley or basil.
- Serve hot with a side of salad or garlic bread.

- Swap rice with quinoa or cauliflower rice for a low-carb option.
