- 4 large eggs
- 2/3 cup granulated sugar
- 1 tsp vanilla extract
- 2/3 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- Powdered sugar (for dusting towel)
- 1 cup strawberry jam or preserves
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar (for whipped cream)
- 1/2 tsp vanilla extract (for whipped cream)
- Fresh strawberries, sliced (optional for filling and garnish)
Instructions
- Preheat oven to 375°F (190°C). Line a 10×15-inch jelly roll pan with parchment paper.
- In a large bowl, beat eggs for 3–5 minutes until thick and pale. Gradually add granulated sugar and vanilla; beat until combined.
- In a separate bowl, whisk together flour, baking powder, and salt. Gently fold into egg mixture until just combined.
- Spread batter evenly in prepared pan. Bake for 10–12 minutes or until cake springs back when lightly touched.
- Dust a clean kitchen towel with powdered sugar. Turn hot cake onto towel and carefully peel off parchment paper.
- Starting from a short side, roll the cake and towel together into a log. Cool completely on a wire rack.
- Meanwhile, beat heavy cream, powdered sugar, and vanilla until soft peaks form.
- Unroll cooled cake. Spread with a thin layer of strawberry jam, then whipped cream. Add sliced strawberries if desired.
- Carefully re-roll cake without the towel. Trim ends for a clean look.
- Dust with powdered sugar or garnish with more whipped cream and strawberries before serving.
Notes
- Roll the cake while it’s still warm to prevent cracking.
- Cake can be made a day in advance and stored refrigerated, wrapped well.
- For a firmer filling, stabilize whipped cream with a bit of gelatin or cream cheese.
- Use a serrated knife to slice for cleaner pieces.
