- 6 tbsp unsalted butter, melted
- 2 tbsp sugar
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 tsp lime zest
- 2 tbsp lime juice
- 1/2 cup whipping cream
- 2 cups fresh strawberries, hulled and sliced
- 1 tbsp lime juice (for topping)
- 1 tbsp sugar (for topping)
- Additional lime zest for garnish
Instructions
- Preheat oven to 350°F (175°C).
- Mix crushed graham crackers with melted butter and sugar. Press into a tart pan to form the crust.
- Bake crust for 8–10 minutes. Let cool completely.
- Beat cream cheese until smooth. Add powdered sugar, vanilla, lime zest, and lime juice; mix until well combined.
- In a separate bowl, whip cream to soft peaks and fold into the cream cheese mixture.
- Spoon filling into cooled crust and smooth the top. Chill for at least 2 hours.
- Combine sliced strawberries with lime juice and sugar. Let sit for 10–15 minutes.
- Arrange strawberries on the tart and drizzle with remaining syrup. Garnish with lime zest.
- Serve chilled.

- Use full-fat block cream cheese for the best texture.
- The tart is not freezer-friendly due to the whipped filling and fresh fruit.
- Crust and filling can be prepared a day ahead; top with fruit before serving.
