Description

  • 1 1/2 cups graham crackers or digestive biscuits, crushed
  • 6 tbsp unsalted butter, melted
  • 2 tbsp sugar
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp lime zest
  • 2 tbsp lime juice
  • 1/2 cup whipping cream
  • 2 cups fresh strawberries, hulled and sliced
  • 1 tbsp lime juice (for topping)
  • 1 tbsp sugar (for topping)
  • Additional lime zest for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix crushed graham crackers with melted butter and sugar. Press into a tart pan to form the crust.
  3. Bake crust for 8–10 minutes. Let cool completely.
  4. Beat cream cheese until smooth. Add powdered sugar, vanilla, lime zest, and lime juice; mix until well combined.
  5. In a separate bowl, whip cream to soft peaks and fold into the cream cheese mixture.
  6. Spoon filling into cooled crust and smooth the top. Chill for at least 2 hours.
  7. Combine sliced strawberries with lime juice and sugar. Let sit for 10–15 minutes.
  8. Arrange strawberries on the tart and drizzle with remaining syrup. Garnish with lime zest.
  9. Serve chilled.
