- 4 bone-in, skin-on chicken thighs
- 1 tbsp olive oil or melted butter
- 1/4 cup honey
- 2 tbsp soy sauce or tamari
- 2 cloves garlic, minced
- 1 tsp Dijon mustard (optional)
- 1 tbsp apple cider vinegar or lemon juice
- Salt and freshly ground black pepper to taste
- Optional: 1/2 tsp smoked paprika
- Optional: 1/4 tsp chili flakes
Instructions
- Preheat oven to 200°C (400°F). In a bowl, whisk together honey, soy sauce, garlic, mustard, vinegar, oil, salt, pepper, and optional paprika or chili flakes.
- Place chicken thighs in a baking dish. Pour half the marinade over, turning to coat. Reserve the rest.
- Bake chicken skin-side up for 25 minutes.
- Remove and brush with reserved marinade. Return to oven and bake for 10–15 more minutes until chicken reaches 75°C (165°F) internally.
- Optional: Broil for 2–3 minutes for extra caramelization, watching closely.
- Let rest briefly, then spoon pan juices over and serve hot.
