- 6 large ripe tomatoes, peeled and chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tbsp butter or olive oil
- 1 tsp sugar (optional, to balance acidity)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1 bay leaf
Instructions
- In a medium saucepan, melt butter or heat olive oil over medium heat.
- Add diced onion and sauté until softened, about 5 minutes.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add chopped tomatoes, sugar, salt, black pepper, basil, oregano, and bay leaf.
- Bring to a simmer, then reduce heat to low.
- Cover and cook for 20–25 minutes, stirring occasionally, until tomatoes break down and flavors meld.
- Remove bay leaf before serving.
- Serve warm as a side dish, over rice, or use in soups and casseroles.
Notes
- Add a splash of balsamic vinegar for extra depth.
- Use canned tomatoes if fresh are unavailable—substitute with one 28 oz can.
- For a smoother texture, mash lightly or blend briefly.
