Description

This Steak Bites and Potatoes recipe is a hearty one-pan dish packed with flavor! Juicy, tender steak bites are paired with crispy golden potatoes, all tossed in a garlic butter and herb seasoning. Perfect for weeknight dinners or special occasions.

For the Potatoes:

  • 1 lb baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper, to taste

For the Steak Bites:

  • 1 lb sirloin steak, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp dried parsley or fresh parsley, chopped
  • Salt and pepper, to taste

Instructions

  1. Cook the Potatoes:
    • Heat 2 tbsp olive oil in a large skillet over medium heat. Add the baby potatoes, cut side down. Season with garlic powder, paprika, thyme, salt, and pepper.
    • Cook for 15-20 minutes, stirring occasionally, until the potatoes are golden and tender. Remove from the skillet and set aside.
  2. Prepare the Steak Bites:
    • While the potatoes cook, season the steak cubes with salt and pepper.
    • In the same skillet, heat 1 tbsp olive oil over medium-high heat. Add the steak bites in a single layer and sear for 2-3 minutes per side until browned but not overcooked. Remove and set aside.
  3. Make the Garlic Butter Sauce:
    • Reduce the heat to medium and melt the butter in the same skillet. Add minced garlic and sauté for 1-2 minutes until fragrant. Stir in parsley.
  4. Combine and Serve:
    • Return the potatoes and steak bites to the skillet. Toss everything in the garlic butter sauce and heat through for 1-2 minutes. Serve immediately.

Notes

  • Add a splash of Worcestershire sauce to the steak for extra depth of flavor.
  • To save time, parboil the potatoes before sautéing to reduce cooking time.
  • For a spicy kick, sprinkle red pepper flakes into the garlic butter.
