For the Potatoes:
- 1 lb baby potatoes, halved
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp dried thyme
- Salt and pepper, to taste
For the Steak Bites:
- 1 lb sirloin steak, cut into 1-inch cubes
- 1 tbsp olive oil
- 2 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 tsp dried parsley or fresh parsley, chopped
- Salt and pepper, to taste
Instructions
- Cook the Potatoes:
- Heat 2 tbsp olive oil in a large skillet over medium heat. Add the baby potatoes, cut side down. Season with garlic powder, paprika, thyme, salt, and pepper.
- Cook for 15-20 minutes, stirring occasionally, until the potatoes are golden and tender. Remove from the skillet and set aside.
- Prepare the Steak Bites:
- While the potatoes cook, season the steak cubes with salt and pepper.
- In the same skillet, heat 1 tbsp olive oil over medium-high heat. Add the steak bites in a single layer and sear for 2-3 minutes per side until browned but not overcooked. Remove and set aside.
- Make the Garlic Butter Sauce:
- Reduce the heat to medium and melt the butter in the same skillet. Add minced garlic and sauté for 1-2 minutes until fragrant. Stir in parsley.
- Combine and Serve:
- Return the potatoes and steak bites to the skillet. Toss everything in the garlic butter sauce and heat through for 1-2 minutes. Serve immediately.

- Add a splash of Worcestershire sauce to the steak for extra depth of flavor.
- To save time, parboil the potatoes before sautéing to reduce cooking time.
