Description

Crispy on the outside, melty and spicy in the middle—these mozzarella-stuffed arancini balls are bite-sized bombs of risotto goodness.


Ingredients

  • 2 cups cooked risotto or rice

  • 1 cup shredded mozzarella

  • 1/2 cup spicy marinara or chili sauce

  • 1 egg

  • 1 cup breadcrumbs

 

  • Oil for frying


Instructions

  • Mix rice with a spoon of sauce and some mozzarella.

  • Shape into balls, stuffing with extra cheese inside.

  • Roll in egg, then breadcrumbs.

 

  • Deep-fry until golden and serve with extra sauce.
