Description

Spicy Mexican Corn Bites are crispy, golden appetizers bursting with sweet corn, zesty lime, chili spices, and fresh herbs. These bite-sized snacks deliver the bold flavors of Mexican street corn in a fun, portable form.


Ingredients

  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal or breadcrumbs
  • 1 egg
  • 2 tbsp mayonnaise or sour cream
  • 1 tbsp lime juice
  • 2 tbsp fresh cilantro, chopped
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 2 tbsp Cotija or Parmesan cheese (optional)
  • Oil for frying

Instructions

  1. In a large bowl, combine corn kernels, flour, cornmeal or breadcrumbs, egg, mayo or sour cream, lime juice, cilantro, chili powder, garlic powder, and salt.
  2. Mix until a cohesive dough forms. Add more flour or breadcrumbs if too wet.
  3. Form into small balls or patties using your hands or a scoop.
  4. Heat oil in a skillet over medium-high heat. Fry bites in batches for 3–4 minutes, turning until golden brown.
  5. Remove and drain on paper towels. Sprinkle with extra chili powder or Cotija cheese if desired.
  6. Serve warm with lime wedges and dipping sauces such as chipotle mayo or guacamole.
