- 2 cups sweet corn kernels (fresh, canned, or frozen and drained)
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal or breadcrumbs
- 1 egg
- 2 tbsp mayonnaise or sour cream
- 1 tbsp lime juice
- 2 tbsp fresh cilantro, chopped
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 2 tbsp Cotija or Parmesan cheese (optional)
- Oil for frying
Instructions
- In a large bowl, combine corn kernels, flour, cornmeal or breadcrumbs, egg, mayo or sour cream, lime juice, cilantro, chili powder, garlic powder, and salt.
- Mix until a cohesive dough forms. Add more flour or breadcrumbs if too wet.
- Form into small balls or patties using your hands or a scoop.
- Heat oil in a skillet over medium-high heat. Fry bites in batches for 3–4 minutes, turning until golden brown.
- Remove and drain on paper towels. Sprinkle with extra chili powder or Cotija cheese if desired.
- Serve warm with lime wedges and dipping sauces such as chipotle mayo or guacamole.

- Ensure corn is well-drained to prevent soggy batter.
- Add diced jalapeños or hot sauce for extra heat.
- For baking, cook at 400°F (200°C) for 15–18 minutes, flipping halfway.
