Description

Spicy Buffalo Cauliflower Bites are crispy, oven-roasted cauliflower florets coated in a zesty buffalo sauce. A bold, vegetarian alternative to wings, they’re perfect for parties, snacks, or meatless meals.


Ingredients

  • 1 medium head cauliflower, cut into bite-sized florets
  • 3/4 cup all-purpose flour
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3/4 cup water or milk (dairy or plant-based)
  • 1/2 cup buffalo hot sauce
  • 2 tbsp butter or vegan butter
  • Optional: ranch or blue cheese dressing, for serving
  • Optional: celery and carrot sticks, for garnish

Instructions

  1. Preheat oven to 425°F (220°C) or set air fryer accordingly. Line a baking sheet with parchment paper.
  2. In a bowl, whisk flour, garlic powder, onion powder, paprika, salt, pepper, and water (or milk) until smooth.
  3. Dip cauliflower florets into the batter, coating evenly.
  4. Place florets on prepared baking sheet or in air fryer basket. Do not overcrowd.
  5. Bake or air fry for 20–25 minutes, flipping halfway, until lightly golden and crisp.
  6. Meanwhile, melt butter in a small saucepan and stir in buffalo sauce until combined.
  7. Remove cauliflower from oven, toss in buffalo sauce until evenly coated.
  8. Return coated cauliflower to oven or air fryer for another 10 minutes to crisp and caramelize.
  9. Serve hot with ranch or blue cheese dressing and celery and carrot sticks.

Notes

  • Use fresh cauliflower for best results; if using frozen, thaw and pat dry thoroughly.
  • Use gluten-free flour for a gluten-free version.
  • Roll in panko after battering for added crunch.
  • Adjust spice by modifying the buffalo sauce or adding chili flakes to the batter.
