- 1 lb ground beef (80/20)
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 2 tbsp taco seasoning or 1 tsp each cumin, chili powder, paprika, and cayenne
- 2 tbsp tomato paste or 1/4 cup salsa
- Salt and black pepper, to taste
- 1 cup shredded cheddar or Mexican blend cheese
- 4 oz cream cheese or 1 cup nacho cheese sauce
- 1–2 tbsp sliced jalapeños or chili flakes (optional)
- 6 large flour tortillas
- Chopped fresh cilantro (for garnish)
- Optional toppings: sour cream, hot sauce, lettuce, diced tomatoes
Instructions
- In a large skillet over medium heat, cook ground beef and diced onion until browned. Drain excess fat and stir in garlic.
- Add taco seasoning, tomato paste or salsa, and a splash of water. Stir and simmer for 5–10 minutes until thickened.
- In a separate pan, melt cream cheese and shredded cheddar together until smooth and creamy, or warm nacho cheese sauce.
- Warm flour tortillas in a skillet or microwave until soft and pliable.
- Assemble the burritos: add beef mixture to each tortilla, top with cheese sauce, jalapeños, and desired toppings.
- Fold in the sides and roll tightly. Toast seam-side down in a skillet until golden and crispy, flipping once.
- Slice in half, garnish with chopped cilantro, and serve warm with salsa or sour cream.
Notes
- Let filling cool slightly before assembling to prevent soggy burritos.
- Freeze assembled burritos individually for future meals.
- Use ground turkey or chicken for a leaner version.
