- 1 can (15 oz) chickpeas, drained and rinsed
- 1 medium zucchini, diced
- 1/2 lb ground turkey (optional)
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a pan over medium heat. Sauté onions and garlic until fragrant.
- Add ground turkey (if using) and cook until browned.
- Stir in diced zucchini and cook for 3 minutes.
- Add chickpeas, tomatoes, and spices. Simmer for 10 minutes.
- Garnish with fresh parsley and serve hot.
Notes
- This dish can be made vegetarian by omitting ground turkey.
- Serve over rice or couscous for a complete meal
