Description

This Spiced Chickpea and Zucchini dish is packed with bold flavors, protein-rich chickpeas, and fresh zucchini in a hearty spiced tomato sauce. A perfect vegan-friendly meal ready in under 30 minutes!


Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 medium zucchini, diced
  • 1/2 lb ground turkey (optional)
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions

  • Heat olive oil in a pan over medium heat. Sauté onions and garlic until fragrant.
  • Add ground turkey (if using) and cook until browned.
  • Stir in diced zucchini and cook for 3 minutes.
  • Add chickpeas, tomatoes, and spices. Simmer for 10 minutes.
  • Garnish with fresh parsley and serve hot.

Notes

  • This dish can be made vegetarian by omitting ground turkey.
  • Serve over rice or couscous for a complete meal
