- 12 oz spaghetti
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional, for heat)
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup chicken broth (or vegetable broth)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 3 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- 1 tablespoon butter
- 1/4 cup sun-dried tomato oil (from the jar, optional for extra flavor)
- Extra Parmesan and fresh basil for garnish
Instructions
- Cook the pasta: Boil spaghetti according to package instructions until al dente. Drain and set aside.
- Sauté garlic & tomatoes: In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes and cook for 1 minute. Stir in sun-dried tomatoes and sauté for 2 minutes.
- Make the sauce: Pour in heavy cream and broth, then season with salt, black pepper, and Italian seasoning. Simmer for 3-4 minutes, stirring occasionally.
- Add spinach & cheese: Stir in spinach and cook until wilted. Mix in Parmesan cheese and butter, letting everything melt into a creamy sauce.
- Combine pasta: Add the cooked spaghetti to the sauce, tossing to coat evenly. If the sauce is too thick, add a splash of reserved pasta water.
- Serve & garnish: Plate and top with extra Parmesan and fresh basil. Enjoy!
