Description

This rich and creamy spaghetti features a savory sun-dried tomato sauce, fresh spinach, and parmesan cheese. It’s an easy, elegant meal perfect for any pasta lover!


Ingredients

  • 12 oz spaghetti
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth (or vegetable broth)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 3 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon butter
  • 1/4 cup sun-dried tomato oil (from the jar, optional for extra flavor)
  • Extra Parmesan and fresh basil for garnish

Instructions

  • Cook the pasta: Boil spaghetti according to package instructions until al dente. Drain and set aside.
  • Sauté garlic & tomatoes: In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes and cook for 1 minute. Stir in sun-dried tomatoes and sauté for 2 minutes.
  • Make the sauce: Pour in heavy cream and broth, then season with salt, black pepper, and Italian seasoning. Simmer for 3-4 minutes, stirring occasionally.
  • Add spinach & cheese: Stir in spinach and cook until wilted. Mix in Parmesan cheese and butter, letting everything melt into a creamy sauce.
  • Combine pasta: Add the cooked spaghetti to the sauce, tossing to coat evenly. If the sauce is too thick, add a splash of reserved pasta water.
  • Serve & garnish: Plate and top with extra Parmesan and fresh basil. Enjoy!

Notes

  • Add grilled chicken or shrimp for extra protein.
  • Use half-and-half instead of heavy cream for a lighter version.
