- 1 tbsp vegetable oil
- 1 large onion, thinly sliced
- 1/3 cup soy sauce
- 2 tbsp honey or brown sugar
- 1 tbsp rice vinegar
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger
- 1 tsp cornstarch mixed with 1 tbsp water (optional, for thickening)
- Salt and pepper to taste
- Sliced green onions and sesame seeds for garnish (optional)
Instructions
- Season chicken thighs lightly with salt and pepper.
- Heat oil in a large skillet over medium heat. Add sliced onions and cook, stirring often, for 10–15 minutes until deeply caramelized. Remove and set aside.
- In the same skillet, add chicken thighs and sear for 3–4 minutes per side until browned.
- While chicken cooks, mix soy sauce, honey (or brown sugar), rice vinegar, garlic, and ginger in a bowl.
- Pour the sauce over the chicken in the skillet. Reduce heat to low and cover. Simmer for 10–12 minutes until chicken is cooked through.
- If using cornstarch, stir it into the sauce and simmer uncovered for 2–3 more minutes until thickened.
- Add the caramelized onions back into the skillet and stir to coat in the glaze.
- Serve hot over rice or noodles, garnished with green onions and sesame seeds if desired.

- Use bone-in thighs for deeper flavor, but increase cooking time slightly.
- Brown sugar gives a richer caramel flavor, while honey adds a floral sweetness.
