- 10 oz (280 g) soba noodles
- 2 tbsp soy sauce
- 1 tbsp mirin
- 1 tbsp rice vinegar
- 2 garlic cloves, minced
- 1 tsp sesame oil
- 1 tbsp vegetable oil
- 2 scallions, thinly sliced
- 1 sheet nori (seaweed), cut into thin strips
- 1 tsp toasted sesame seeds (optional)
Instructions
- Cook soba noodles according to package directions until al dente. Drain, rinse under cold water, and set aside.
- In a small bowl, whisk together soy sauce, mirin, rice vinegar, garlic, and sesame oil.
- Heat vegetable oil in a skillet over medium heat. Add cooked soba noodles and pour in the sauce. Toss to combine and heat through for 1–2 minutes.
- Remove from heat and garnish with scallions, seaweed strips, and sesame seeds.
- Serve warm or chilled as desired.
Notes
- For extra protein, top with a soft-boiled egg or tofu.
