Description

Chewy, soft-baked oatmeal cookies packed with trail mix goodness — nuts, seeds, dried fruits, and chocolate chips. Perfect for a wholesome snack or breakfast on-the-go.


Ingredients

  • 3/4 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil or unsalted butter, melted
  • 1/3 cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup trail mix (combination of nuts, seeds, dried fruit, chocolate chips)
  • 1/4 cup additional chocolate chips or dried fruit (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together oats, flour, baking soda, cinnamon, and salt.
  3. In another bowl, mix melted coconut oil (or butter), honey (or maple syrup), egg, and vanilla until well combined.
  4. Stir wet ingredients into dry until just combined.
  5. Fold in trail mix and any additional chocolate chips or dried fruit.
  6. Use a cookie scoop or tablespoon to drop dough onto prepared baking sheet, spacing about 2 inches apart.
  7. Bake for 10–12 minutes, until edges are set and centers are still soft.
  8. Let cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
