A bold and hearty stir-fry featuring smoky sausage, tender potatoes, crisp green beans, and sweet bell peppers. This quick one-pan dish delivers layers of flavor and satisfying textures in every bite.

- 2 smoked sausages (about 8 oz), sliced into rounds
- 2 medium potatoes, diced
- 1 cup green beans, trimmed and halved
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small onion, sliced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- Salt and pepper to taste
- 1 tbsp chopped parsley (for garnish)
Instructions
- Boil diced potatoes in salted water for 6–8 minutes until just tender. Drain and set aside.
- Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add sliced sausage and cook for 4–5 minutes until browned. Remove and set aside.
- Add remaining 1 tbsp olive oil to the skillet. Sauté onion and garlic for 1–2 minutes until fragrant.
- Add green beans and bell peppers. Cook for 5–6 minutes, stirring occasionally, until just tender.
- Add cooked potatoes, smoked paprika, thyme, salt, and pepper. Stir well and cook for another 3–4 minutes to crisp up the potatoes slightly.
- Return sausage to the skillet and toss everything together. Cook for 1–2 minutes more until heated through.
- Garnish with chopped parsley and serve hot.
Notes
- For extra heat, add chili flakes or sliced jalapeños.
- Use chicken, turkey, or plant-based sausage to fit dietary needs.
- Parboil potatoes ahead of time to speed up prep.
