Smoky Chipotle Chicken is a bold and flavorful dish made with tender chicken marinated in a blend of chipotle peppers, garlic, lime, and spices, then grilled or pan-seared for a smoky, spicy finish.

- 1 1/2 lbs boneless, skinless chicken thighs or breasts
- 2 chipotle peppers in adobo sauce, minced
- 1 tablespoon adobo sauce
- 3 cloves garlic, minced
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
- Optional garnish: chopped cilantro, lime wedges
Instructions
- In a bowl or zip-top bag, combine chipotle peppers, adobo sauce, garlic, lime juice, olive oil, cumin, smoked paprika, oregano, salt, and pepper.
- Add chicken and toss to coat. Marinate in the refrigerator for at least 30 minutes, preferably 2–4 hours.
- Preheat grill or skillet over medium-high heat. Lightly oil the grates or pan.
- Cook chicken for 5–7 minutes per side or until cooked through and internal temperature reaches 165°F (74°C).
- Rest chicken for 5 minutes, then slice and serve with desired garnishes.
Notes
- Use chicken thighs for juicier results, but breasts also work well.
- Adjust chipotle amount based on desired spice level.
- Great served with rice, tortillas, or in tacos and bowls.
