Description

Smoky Chipotle Chicken is a bold and flavorful dish made with tender chicken marinated in a blend of chipotle peppers, garlic, lime, and spices, then grilled or pan-seared for a smoky, spicy finish.


Ingredients

  • 1 1/2 lbs boneless, skinless chicken thighs or breasts
  • 2 chipotle peppers in adobo sauce, minced
  • 1 tablespoon adobo sauce
  • 3 cloves garlic, minced
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • Optional garnish: chopped cilantro, lime wedges

Instructions

  1. In a bowl or zip-top bag, combine chipotle peppers, adobo sauce, garlic, lime juice, olive oil, cumin, smoked paprika, oregano, salt, and pepper.
  2. Add chicken and toss to coat. Marinate in the refrigerator for at least 30 minutes, preferably 2–4 hours.
  3. Preheat grill or skillet over medium-high heat. Lightly oil the grates or pan.
  4. Cook chicken for 5–7 minutes per side or until cooked through and internal temperature reaches 165°F (74°C).
  5. Rest chicken for 5 minutes, then slice and serve with desired garnishes.

Notes

  • Use chicken thighs for juicier results, but breasts also work well.
  • Adjust chipotle amount based on desired spice level.
  • Great served with rice, tortillas, or in tacos and bowls.
