Scale
- 1 pound boneless, skinless chicken breasts or thighs, sliced
- 2 tablespoons olive oil or butter
- 3 cloves garlic, minced
- 8 ounces pasta (penne, fettuccine, or your choice)
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt, to taste
- Black pepper, to taste
- 1 cup broccoli florets or spinach (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Season sliced chicken with salt and pepper.
- In a large skillet, heat olive oil over medium heat. Cook chicken until browned and cooked through, about 5–7 minutes. Remove and set aside.
- In the same skillet, add garlic and sauté for 1 minute until fragrant.
- Add uncooked pasta, chicken broth, and heavy cream. Stir and bring to a gentle boil.
- Reduce heat and simmer uncovered for 12–15 minutes, stirring occasionally, until pasta is tender and sauce has thickened.
- Stir in Parmesan cheese until melted and creamy.
- Return chicken to the skillet and stir to combine. Add steamed broccoli or spinach if using.
- Garnish with chopped parsley and serve warm.
Notes
- Substitute shrimp or sausage for chicken for a variation.
- Add sun-dried tomatoes or mushrooms for extra flavor.
- Use milk and a tablespoon of flour for a lighter sauce.
- Add a splash of milk or broth when reheating to keep the sauce smooth.
- Best enjoyed fresh; not ideal for freezing due to cream content.
