  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1/3 cup dry white wine (or chicken broth)
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve 1/2 cup of pasta water, then drain.
  2. Meanwhile, heat olive oil and 2 tablespoons of butter in a large skillet over medium heat.
  3. Add minced garlic and cook for 30 seconds until fragrant.
  4. Add shrimp, season with salt, pepper, and red pepper flakes. Sauté 1–2 minutes per side until shrimp are pink and opaque. Remove shrimp and set aside.
  5. Pour in white wine and lemon juice. Simmer for 2–3 minutes to reduce slightly.
  6. Return shrimp to the skillet and add drained pasta. Toss to coat everything evenly.
  7. Add reserved pasta water a little at a time if needed to loosen the sauce.
  8. Stir in remaining 2 tablespoons of butter, lemon zest, and chopped parsley. Toss well and serve immediately.
