Scale
- 12 oz spaghetti, linguine, or angel hair pasta
- 1 lb large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter, divided
- 4 cloves garlic, minced
- 1/3 cup dry white wine (or chicken broth)
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 2 tablespoons fresh parsley, chopped
Instructions
- Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve 1/2 cup of pasta water, then drain.
- Meanwhile, heat olive oil and 2 tablespoons of butter in a large skillet over medium heat.
- Add minced garlic and cook for 30 seconds until fragrant.
- Add shrimp, season with salt, pepper, and red pepper flakes. Sauté 1–2 minutes per side until shrimp are pink and opaque. Remove shrimp and set aside.
- Pour in white wine and lemon juice. Simmer for 2–3 minutes to reduce slightly.
- Return shrimp to the skillet and add drained pasta. Toss to coat everything evenly.
- Add reserved pasta water a little at a time if needed to loosen the sauce.
- Stir in remaining 2 tablespoons of butter, lemon zest, and chopped parsley. Toss well and serve immediately.
Notes
- Use raw shrimp for best flavor and texture; avoid overcooking.
- Replace white wine with chicken or seafood broth for a non-alcoholic version.
- Garnish with extra lemon wedges and parsley for presentation.
- For added flavor, sprinkle with grated parmesan—optional in traditional versions.
- This dish pairs beautifully with crusty bread or a crisp green salad.
