- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 4 cups beef broth
- 1 can (14 oz) diced tomatoes
- 1 cup egg noodles
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
Instructions
- Cook Beef: In a pot, brown ground beef with onions and garlic. Drain excess fat.
- Add Vegetables & Broth: Stir in carrots, celery, diced tomatoes, and beef broth.
- Season & Simmer: Add Italian seasoning, salt, and pepper. Simmer for 15 minutes.
- Cook Noodles: Add egg noodles and cook until tender.
- Finish: Stir in parmesan cheese and parsley before serving.
Notes
- Swap ground beef for turkey or chicken for a lighter version.
- Add extra vegetables like zucchini or bell peppers for more nutrients.
