Description

A hearty and flavorful soup loaded with ground beef, vegetables, noodles, and a touch of parmesan.


Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 4 cups beef broth
  • 1 can (14 oz) diced tomatoes
  • 1 cup egg noodles
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped

Instructions

  • Cook Beef: In a pot, brown ground beef with onions and garlic. Drain excess fat.
  • Add Vegetables & Broth: Stir in carrots, celery, diced tomatoes, and beef broth.
  • Season & Simmer: Add Italian seasoning, salt, and pepper. Simmer for 15 minutes.
  • Cook Noodles: Add egg noodles and cook until tender.
  • Finish: Stir in parmesan cheese and parsley before serving.

Notes

  • Swap ground beef for turkey or chicken for a lighter version.
  • Add extra vegetables like zucchini or bell peppers for more nutrients.
