Description

Quick, hearty, and packed with protein, this Scrambled Egg Toast is the perfect easy breakfast or brunch recipe! Soft, creamy scrambled eggs piled onto crispy toast make a satisfying meal that’s customizable with your favorite toppings.


Ingredients

  • 2 large eggs

  • 2 tablespoons milk or cream (optional for creamier eggs)

  • Salt and pepper, to taste

  • 1 tablespoon butter

  • 2 slices of bread (sourdough, multigrain, or your choice)

  • Optional toppings: sliced avocado, chopped chives, shredded cheese, hot sauce


Instructions

  • Crack the eggs into a bowl, add milk (if using), and whisk until fully combined.

  • Heat a non-stick skillet over medium-low heat and add the butter.

  • Pour the eggs into the skillet and gently stir with a spatula, scraping the bottom as they cook slowly.

  • Cook the eggs until just set but still slightly creamy. Remove from heat immediately.

  • Meanwhile, toast the bread slices until golden.

  • Pile the scrambled eggs evenly onto the toasted bread.

 

  • Add any optional toppings you like and serve immediately.


Notes

  • Cooking the eggs on low heat gives them a soft and creamy texture.
