Description
Savory Corn Fritters with Herb Sauce are crispy, golden patties made from sweet corn, herbs, and a light batter, pan-fried to perfection and served with a zesty green herb sauce — ideal as an appetizer, snack, or side dish.
Ingredients
Scale
- 2 cups fresh or frozen corn kernels (thawed if frozen)
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1/2 tsp baking powder
- 2 eggs
- 1/4 cup milk
- 2 green onions, finely sliced
- 1/4 cup chopped fresh herbs (parsley, cilantro, or dill)
- Salt and pepper to taste
- Vegetable oil, for frying
- For the herb sauce:
- 1/2 cup Greek yogurt or sour cream
- 2 tbsp chopped fresh herbs (basil, parsley, cilantro, or a mix)
- 1 clove garlic, minced
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- In a mixing bowl, whisk together flour, cornmeal, baking powder, salt, and pepper.
- In a separate bowl, beat the eggs and milk. Stir in corn, green onions, and chopped herbs.
- Add wet ingredients to the dry ingredients and mix just until combined.
- Heat about 2 tbsp of oil in a large skillet over medium heat. Drop spoonfuls of batter into the skillet and flatten slightly.
- Cook for 2–3 minutes per side, or until golden brown and cooked through. Transfer to a paper towel-lined plate.
- To make the herb sauce, combine yogurt, herbs, garlic, lemon juice, salt, and pepper in a small bowl. Mix until smooth.
- Serve fritters warm with the herb sauce on the side or drizzled over top.
Notes
- For extra crunch, let the batter rest for 10 minutes before frying.
- You can add shredded cheese, diced red pepper, or cooked bacon for variation.
- Fritters can be kept warm in a 200°F (95°C) oven while frying in batches.
- Great served as a brunch side, appetizer, or light vegetarian meal.
