Instructions
- Toast the bagels until golden and slightly crisp. Set aside.
- In a bowl, whisk eggs with milk, salt, and pepper.
- Heat butter or oil in a skillet over medium heat, then pour in the egg mixture.
- Gently scramble the eggs until soft and cooked through. Remove from heat.
- Warm the cooked chicken if desired, or use it cold.
- Assemble the sandwich: spread mayo or sauce (if using) on the bottom half of the toasted bagel.
