Scale
- 200 g fresh sugar snap peas, trimmed
- 2 cloves garlic, thinly sliced or minced
- 1 tbsp olive oil or butter
- 1 tsp lemon zest
- 1 tsp lemon juice
- Salt and freshly ground black pepper to taste
- Optional: 1/4 tsp crushed red pepper flakes
- Optional: 2 tbsp grated Parmesan or chopped fresh herbs (parsley or mint)
Instructions
- Rinse sugar snap peas and trim ends. Pat dry thoroughly.
- Heat olive oil or butter in a skillet over medium-high heat until shimmering.
- Add garlic (and red pepper flakes if using); sauté for 20–30 seconds until fragrant but not browned.
- Add sugar snap peas in a single layer. Sauté, stirring occasionally, for 4–5 minutes until bright green and tender-crisp.
- Remove from heat. Add lemon zest, lemon juice, salt, pepper, and optional Parmesan or herbs. Toss to combine.
- Transfer to a serving dish and serve warm.
Notes
- Dry peas thoroughly to ensure proper sautéing, not steaming.
- Use a wide skillet and avoid overcrowding for even browning.
- High heat seals in color and keeps texture snappy.
- Garlic should be cooked just until fragrant to avoid bitterness.
- Lemon zest and juice add freshness—adjust to taste.
