Description
Sautéed Steak Bites with Green Beans and Roasted Vegetables is a hearty, protein-packed meal featuring tender, seared steak cubes paired with crisp-tender green beans and a medley of flavorful roasted veggies — a well-balanced dinner full of texture and taste.
Ingredients
Scale
- 1 lb sirloin steak, cut into bite-sized cubes
- 2 tbsp olive oil, divided
- 2 cups green beans, trimmed
- 2 cups assorted vegetables (e.g., bell peppers, zucchini, carrots), chopped
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and black pepper to taste
- 1 tbsp soy sauce or Worcestershire sauce (optional, for added flavor)
- 1/2 tsp crushed red pepper flakes (optional)
- Fresh herbs (like parsley or thyme), for garnish
Instructions
- Preheat oven to 425°F (220°C). Toss chopped vegetables with 1 tbsp olive oil, salt, pepper, and half the garlic and onion powder. Spread on a baking sheet and roast for 20–25 minutes, tossing halfway through.
- While vegetables roast, heat 1/2 tbsp olive oil in a large skillet over medium-high heat. Add green beans and sauté for 4–6 minutes, until tender-crisp. Remove and set aside.
- Season steak cubes with salt, pepper, and remaining garlic and onion powder.
- In the same skillet, heat remaining 1/2 tbsp olive oil over high heat. Add steak bites in a single layer and sear for 2–3 minutes per side, or until browned and cooked to desired doneness.
- Optional: add soy sauce or Worcestershire to the pan during the last minute of cooking for extra flavor. Stir in red pepper flakes if using.
- Return green beans to the skillet with steak and toss to combine. Serve hot with roasted vegetables on the side, garnished with fresh herbs.
Notes
- Let steak rest at room temperature for 15–20 minutes before cooking for more even searing.
- Customize the roasted veggies with your favorites or whatever’s in season.
- For added richness, top with a pat of herb butter before serving.
- This meal works well for meal prep — store in airtight containers and reheat gently.
