- 12 oz smoked or Italian sausage, sliced
- 2 cups cooked white or brown rice
- 1 cup sweet corn kernels (fresh, frozen, or canned)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped (optional)
- 1–2 tbsp olive oil or butter
- 1 tsp paprika
- 1/2 tsp dried thyme or oregano
- Salt and black pepper, to taste
- 2 tbsp chopped fresh parsley or green onions (for garnish)
Instructions
- Heat olive oil or butter in a large skillet over medium heat.
- Add sliced sausage and cook until browned on both sides. Remove and set aside.
- In the same skillet, sauté onion, garlic, and bell pepper (if using) until softened, about 5 minutes.
- Add sweet corn, paprika, thyme, salt, and pepper. Stir to combine.
- Add cooked rice and return sausage to the pan. Stir everything together and cook for 5–7 minutes until heated through.
- Taste and adjust seasoning if needed.
- Garnish with chopped parsley or green onions before serving.
