Description

Sausage and Sweet Corn Rice Skillet is a flavorful, one-pan dish featuring browned sausage, sweet corn, and tender rice infused with savory herbs and spices—perfect for quick weeknight meals.


Ingredients

  • 12 oz smoked or Italian sausage, sliced
  • 2 cups cooked white or brown rice
  • 1 cup sweet corn kernels (fresh, frozen, or canned)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped (optional)
  • 12 tbsp olive oil or butter
  • 1 tsp paprika
  • 1/2 tsp dried thyme or oregano
  • Salt and black pepper, to taste
  • 2 tbsp chopped fresh parsley or green onions (for garnish)

Instructions

  1. Heat olive oil or butter in a large skillet over medium heat.
  2. Add sliced sausage and cook until browned on both sides. Remove and set aside.
  3. In the same skillet, sauté onion, garlic, and bell pepper (if using) until softened, about 5 minutes.
  4. Add sweet corn, paprika, thyme, salt, and pepper. Stir to combine.
  5. Add cooked rice and return sausage to the pan. Stir everything together and cook for 5–7 minutes until heated through.
  6. Taste and adjust seasoning if needed.
  7. Garnish with chopped parsley or green onions before serving.
