- 1 pound fresh salmon, skin removed and finely chopped
- 1/2 cup breadcrumbs
- 1 egg
- 2 tablespoons fresh dill, chopped
- 2 tablespoons parsley, chopped
- 2 green onions, finely sliced
- 1 garlic clove, minced
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (for cooking)
- For the Herbed Green Sauce:
- 1/2 cup Greek yogurt
- 1/4 cup fresh parsley
- 1/4 cup fresh basil or cilantro
- 1 green onion
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- Salt and pepper, to taste
Instructions
- In a bowl, mix chopped salmon, breadcrumbs, egg, dill, parsley, green onions, garlic, lemon juice, salt, and pepper until well combined.
- Form the mixture into small meatballs, about 1 to 1.5 inches in diameter.
- Heat olive oil in a skillet over medium heat. Add the salmon meatballs and cook for 3–4 minutes per side until golden brown and cooked through.
- Meanwhile, prepare the herbed green sauce by blending all sauce ingredients in a food processor until smooth. Adjust seasoning to taste.
- Serve salmon meatballs warm with a generous drizzle of the green sauce. Garnish with extra herbs if desired.
Notes
- Make the meatballs smaller for a party appetizer or larger for a main course.
- Use canned salmon if fresh isn’t available — just drain well and remove any bones.
- Chill the meatballs for 15 minutes before cooking for better shape retention.
- The green sauce also pairs well with grilled veggies or roasted potatoes.
