- 1 pound smoked sausage, sliced
- 2 medium sweet potatoes, peeled and cubed
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 small red onion, chopped
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat oven to 425°F (220°C).
- In a large oven-safe skillet or baking sheet, combine sliced sausage, cubed sweet potatoes, bell peppers, and red onion.
- Drizzle with olive oil and sprinkle with garlic powder, smoked paprika, salt, and pepper.
- Toss everything together to coat evenly.
- Roast in the oven for 25–30 minutes, stirring halfway through, until sweet potatoes are tender and slightly caramelized.
- Remove from oven and garnish with fresh parsley if desired. Serve hot.
