Description
Roasted Onions with Garlic and Herbs is a simple yet flavorful side dish featuring tender, caramelized onions roasted with whole garlic cloves and aromatic herbs for a rich, savory addition to any meal.
Ingredients
Scale
- 4 medium onions (yellow, red, or a mix), peeled and quartered
- 6 garlic cloves, peeled
- 2 tbsp olive oil
- 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
- 1 tsp fresh rosemary, chopped (or 1/2 tsp dried rosemary)
- Salt and freshly ground black pepper to taste
- Optional: balsamic vinegar drizzle for serving
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet or roasting pan with parchment paper or lightly grease it.
- Place the quartered onions and garlic cloves in a large bowl. Add olive oil, thyme, rosemary, salt, and pepper. Toss to coat evenly.
- Spread the mixture in a single layer on the prepared baking sheet.
- Roast for 35–40 minutes, turning once halfway through, until onions are golden and tender and garlic is soft.
- Optional: Drizzle with a little balsamic vinegar before serving for extra depth of flavor.
- Serve warm as a side dish or topping for meats, grains, or salads.
Notes
- Use a mix of onion varieties for color and flavor contrast.
- Leftovers can be added to sandwiches, omelets, or pureed into soups.
- Roasting mellows the sharpness of onions and brings out their natural sweetness.
- Double the garlic if you love a strong roasted garlic flavor.
