Description
Tender roasted carrots coated in a sweet and savory glaze made with honey, butter, and herbs, perfect as an easy side dish.

- 1 1/2 lbs carrots, peeled and cut into sticks
- 2 tbsp olive oil
- 2 tbsp honey or maple syrup
- 1 tbsp melted butter
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried thyme or fresh thyme leaves
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, whisk together olive oil, honey, melted butter, salt, pepper, and thyme.
- Add the carrots and toss to coat evenly.
- Spread the carrots in a single layer on the baking sheet.
- Roast for 20–25 minutes, stirring halfway through, until tender and lightly caramelized.
- Serve warm, spooning extra glaze from the pan over the carrots.
Notes
- For extra caramelization, broil for the last 2 minutes.
- Use maple syrup instead of honey for a vegan version (omit butter or use vegan butter).
- Add a squeeze of lemon juice before serving for brightness.
